Pasta Arrabbiata ~ Cooking Thursday

This recipe is quick, fast (less than 15 minutes) and my family loves it!

I prefer this pasta without the beef and with just the veggies and sauce (pictured below).  My husband and kids LOVE the Beef Rigatoni version which is the recipe I am posting today.

Beef Pasta Arrabbiata

Source: Hunt's Recipes
Serves: 4

12 ounces dry rigatoni pasta, uncooked (any kind of pasta works well)

PAM® Olive Oil No-Stick Cooking Spray

1 pound of ground beef

1 cup bell pepper strips or diced (red, green and/or yellow)

1/2 cup sliced yellow onion

2 cans (14.5 oz each) Hunt’s® Diced Tomatoes with

Spicy Red Pepper, undrained

2 cans (8 oz each) Tomato Sauce

1/3 cup shredded mozzarella cheese (optional)

Cook pasta according to package directions, omitting salt.
Meanwhile, spray large skillet with cooking spray; heat over medium-high heat.

Add beef; cook 5 minutes or until crumbled and no longer pink, stirring occasionally.

Add bell pepper and onion; cook 2 to 3 minutes or until vegetables are tender.

Add undrained tomatoes and tomato sauce; reduce heat and simmer 5 to 7 minutes. Stir in cooked pasta.

        Sprinkle with cheese and serve!
